Spinach and Minced Meat Pasta


​Time: 45minutes

Ingredients:

  • 250g wholemeal spaghetti
  • 250g minced meat (e.g beef / chicken)
  • 2 cups of spinach
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 400g fresh tomatoes, diced
  • 1 can (160g) of tomato paste / puree
  • 2 cups of low sodium chicken broth
  • 2 tablespoons of Parmesan cheese
  • 2 tablespoons of olive oil
  • 1 tablespoon of chopped Italian parsley
  • 1 tablespoon of chopped Italian basil
  • Black pepper (optional)
  • Chilli flakes (optional)

Preparation:

  • Heat oil in a wide skillet, pan or pot over medium heat. Add the onion and garlic, sauté 3 minutes or until they start to brown. Add tomatoes, tomato paste, chicken broth, Italian basil and spaghetti. If your skillet, pan or pot is not wide enough, break the spaghetti into halves before cooking.
  • Press the spaghetti with a spatula to submerge the pasta in the liquid. Add more water until the pasta is fully submerged if necessary. Cook for 15 – 20 minutes or until the pasta is al dente, stirring constantly.
  • If the pasta is not cooked after 15 - 20 minutes or appears to be drying out, add a little bit more water, cover the lid and cook for another 2 to 3 minutes.
  • Add the minced meat (e.g beef / chicken) and spinach and cover with the lid and reduce heat to medium-low. Cook for another 5 minutes or until meat is fully cooked.
  • Uncover the lid, and add in chilli flakes and black pepper if desired. Turn off the heat and sprinkle the pasta with Parmesan cheese and parsley. Serve immediately.

  • Swap out store bought chicken broth with homemade broth for a healthier alternative
  • Using fresh tomatoes instead of canned tomatoes will lower your sodium intake
  • Choosing wholemeal spaghetti over white spaghetti will boost your fibre intake
  • Pair this with a cup of fruit yoghurt and a salad for a balanced meal
